Crostata Dough Preparation

Make the dough
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the apple filling
In a large bowl, toss the sliced apples with sugar, cinnamon, lemon juice, and cornstarch. Ensure the apples are well-coated and set aside to allow the flavors to meld.

Assemble the crostata
Preheat the oven to 375°F (190°C). Roll out the crostata dough on a floured surface into a large circle, about 12 inches in diameter. Transfer to a baking sheet lined with parchment paper. Pile the apple mixture in the center of the dough, leaving about 2 inches of border. Fold the edges of the dough over the apples, pleating as necessary.

Bake the crostata
Bake in the preheated oven for 35-40 minutes, or until the apples are tender and the crust is golden brown. Remove from the oven and let cool slightly.

Make the caramel sauce
In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color. Carefully add the butter and stir until melted. Slowly drizzle in the heavy cream while stirring continuously. Add a pinch of salt, and allow to cool slightly.
