    Prepare the Sticky Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook according to the package instructions. Once cooked, mix in rice vinegar, sugar, and salt. Let it cool.

    Make the Sesame Cucumber Salad

    Slice the cucumber thinly and toss with sesame oil, salt, and sesame seeds. Let it marinate for about 15 minutes.

    Marinate the Daikon

    Peel and julienne the daikon radish. Toss with a little salt and let it sit for 10 minutes to soften.

    Prepare the Chai Tea Infused Egg

    Boil water and steep the chai tea bags for 5 minutes. Remove the tea bags and add the eggs to the hot tea. Let them sit for 6-7 minutes for soft-boiled eggs. Remove, cool, and peel.

    Prepare the Ahi Tuna

    Dice the yellowfin ahi tuna into bite-sized pieces and marinate in soy sauce for 10 minutes.

    Assemble the Poke Bowl

    In a bowl, layer the sticky rice, marinated tuna, edamame, sesame cucumber salad, marinated daikon, and halved chai tea infused egg. Garnish with chopped green onions and additional sesame seeds if desired.
