    Prepare Shallot Confit

    In a small saucepan, heat olive oil over low heat. Add sliced shallots and cook slowly until they are soft and caramelized, about 15-20 minutes. Set aside.

    Make Sauce au Poivre

    In a separate saucepan, crush black peppercorns and add them to the pan with beef stock. Bring to a simmer and reduce by half. Stir in heavy cream and simmer until thickened, about 5-7 minutes. Season with salt to taste.

    Cook Wagyu Steak

    Season the Wagyu top sirloin with salt. Heat a skillet over high heat and sear the steak for 3-4 minutes on each side for medium-rare. Remove from heat and let it rest for a few minutes before slicing.

    Prepare Truffle Fries

    While the steak rests, cut the potatoes into fry shapes. Fry or bake them until crispy. Drizzle with truffle oil and season with salt.

    Plate the Dish

    Slice the Wagyu steak and place it on a plate. Top with shallot confit and pour sauce au poivre over it. Serve alongside truffle fries, garnished with fresh parsley.
