    Prepare the Steak

    Take the New York Strip steak out of the refrigerator and let it come to room temperature for about 30 minutes. Preheat your grill or skillet over medium-high heat. Season both sides of the steak with salt and black pepper.

    Cook the Steak

    Add olive oil to the skillet or grill. Once hot, place the steak on the cooking surface. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. In the last minute of cooking, add butter, garlic, and thyme to the pan, basting the steak with the melted butter.

    Rest the Steak

    Remove the steak from the heat and let it rest for 5-10 minutes before slicing.

    Prepare the Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot. Mash the potatoes with milk and butter until smooth and creamy. Season with salt to taste.

    Sauté the Seasonal Vegetables

    In a separate pan, sauté the seasonal vegetables in a bit of olive oil over medium heat until tender, about 5-7 minutes. Season with salt and pepper.
