    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Remove the potatoes from the water and pat them dry with paper towels. Carefully add a batch of potatoes to the hot oil and fry for about 4-5 minutes, or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the frites from the oil and drain on paper towels. While they are still hot, drizzle with truffle oil and sprinkle with sea salt and freshly ground black pepper.

    Add Parmesan and Parsley

    Toss the frites with grated Parmesan cheese and chopped fresh parsley before serving.
