Method

For the Cedar Roasted Salmon

    Prepare the Cedar Planks

    Soak the cedar planks in water for at least 1 hour.

    Mix the Rub

    In a small bowl, combine brown sugar, cinnamon, nutmeg, salt, and pepper.

    Prepare the Salmon

    Pat the salmon fillets dry and rub them with olive oil and the spice mixture.

    Roast the Salmon

    Place the salmon on the soaked cedar planks and grill or bake at 375°F (190°C) for about 15-20 minutes.

For the Farro Risotto

    Cook the Farro

    In a saucepan, bring vegetable broth to a simmer. Stir in farro and cook until tender, about 30 minutes.

    Sauté the Aromatics

    In a separate pan, melt butter and sauté onions and garlic until translucent.

    Combine and Finish

    Add cooked farro to the onion mixture, stir in parmesan, salt, and pepper to taste, and keep warm.

For the Butternut Squash Puree

    Cook the Squash

    In a pot, boil butternut squash until tender, about 15 minutes.

    Puree the Squash

    Drain and blend squash with butter, salt, pepper, and nutmeg until smooth.

For the Balsamic Brown Butter

    Brown the Butter

    In a small saucepan, melt the butter over medium heat until it turns golden brown.

    Add Balsamic Vinegar

    Remove from heat and stir in balsamic vinegar. Drizzle over the finished dish.
