    Cook the Bucatini

    Bring a large pot of salted water to a boil. Add bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté Shrimp

    In a large skillet, heat olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through. Remove from skillet and set aside.

    Prepare Sauce

    In the same skillet, add the roasted garlic and cook for 1 minute. Pour in the white wine and let it simmer for 2-3 minutes, allowing the alcohol to cook off.

    Combine Ingredients

    Add the halved heirloom cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften. Return the cooked shrimp to the skillet.

    Finish the Dish

    Toss in the cooked bucatini pasta along with reserved pasta water as needed to create a sauce. Stir in chopped parsley, salt, black pepper, and red pepper flakes to taste. Serve immediately.
