    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

    Mix the Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar and mix until combined. Add sour cream, vanilla extract, and mix until smooth. Add eggs one at a time, mixing on low until just combined.

    Bake the Cheesecake

    Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

    Chill and Serve

    Once cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with seasonal fruit. Remove the sides of the springform pan and slice the cheesecake.
