    Pickling the Peppers

    In a saucepan, combine white vinegar, water, sugar, and salt. Heat until the sugar and salt dissolve. Add sliced lipstick peppers and simmer for about 5 minutes. Transfer to a jar and let cool.

    Preparing the Aioli

    In a blender, combine avocado, mayonnaise, cilantro, lime juice, garlic, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

    Searing the Ahi Tuna

    Heat olive oil in a skillet over medium-high heat. Season the Ahi tuna steaks with salt and black pepper. Sear for about 1-2 minutes on each side for rare, or longer if desired. Sprinkle sesame seeds on both sides while cooking.

    Serving

    Plate the seared Ahi tuna alongside pickled lipstick peppers. Drizzle with avocado cilantro aioli and serve immediately.
