    Cook the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

    Grill the Baby Romaine

    Preheat your grill or grill pan over medium heat. Brush the cut sides of the baby romaine with olive oil, salt, and pepper. Grill for 2-3 minutes on each side until slightly charred. Remove and set aside.

    Cook the Salmon

    Season the salmon fillets with olive oil, salt, and pepper. Grill for about 4-5 minutes on each side or until cooked through and flaky. Remove from the grill and let rest.

    Sauté the Seasonal Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasonal vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper.

    In a separate small pan, cook the eggs to your liking (poached, sunny-side up, or scrambled). Season with salt and pepper.

    Assemble the Power Bowl

    In a bowl, layer the cooked quinoa, grilled baby romaine, sautéed seasonal vegetables, and grilled salmon. Top with sliced avocado, the cooked egg, and drizzle with lemon juice. Serve warm.
