Shallot Confit

    Prepare the Shallot Confit

    In a saucepan, combine the sliced shallots and olive oil. Cook over low heat until the shallots are soft and caramelized, about 20-30 minutes. Add thyme sprigs, and season with salt to taste. Remove from heat and set aside.

Truffle Fries

    Make the Truffle Fries

    Preheat the oven to 425°F (220°C). Toss the cut fries with olive oil and salt. Spread them on a baking sheet in a single layer. Bake for 30-35 minutes until golden and crispy. Drizzle with truffle oil and sprinkle with grated Parmesan cheese before serving.

Steak and Sauce

    Cook the Wagyu Steak

    Season the Wagyu beef steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 3-4 minutes per side for medium-rare, or until desired doneness. Remove from the skillet and let it rest.

    Prepare the Sauce au Poivre

    In the same skillet, add crushed black peppercorns and brandy. Carefully deglaze the pan, scraping up any brown bits. Add beef stock and reduce by half. Stir in heavy cream and simmer until thickened. Season with salt to taste.

Assembly

    Assemble the Dish

    On a plate, place the Wagyu steak, spoon over the shallot confit, and drizzle with sauce au poivre. Serve with a generous portion of truffle fries on the side.
