Directions

  1. 1

    Cook the Bacon

In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

  2. 2

    Sauté Vegetables

In the same pot, add butter, onion, celery, and garlic. Sauté until the onion is translucent and the vegetables are softened.

  3. 3

    Add Potatoes and Broth

Add the diced potatoes, chicken broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for about 15 minutes or until the potatoes are tender.

  4. 4

    Add Clams and Cream

Stir in the clams and heavy cream. Let the chowder simmer for another 5 minutes, allowing the flavors to meld.

  5. 5

    Serve

Remove the bay leaf, adjust seasoning with salt and pepper if needed, and serve hot, garnished with the crispy bacon.
