Marinate the Chicken
In a large bowl, combine buttermilk and hot sauce. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.

Prepare the Breading
In a separate bowl, mix flour, cornstarch, cayenne pepper, garlic powder, onion powder, paprika, salt, and black pepper. Set aside.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from marinade, allowing excess to drip off, then dredge in the flour mixture. Fry chicken for about 7-8 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Place fried chicken on the bottom half of a brioche bun. Top with cole slaw and house-made pickles. Close with the top half of the bun.
