    Prepare the Lobster

    In a large pot, melt the butter over medium heat. Add the lobster tails and cook for about 5 minutes, turning occasionally, until the shells turn bright red. Remove the lobster tails and set aside to cool.

    Sauté Vegetables

    In the same pot, add the chopped onion, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are soft. Add the garlic and cook for an additional minute.

    Add Tomato Paste and Stock

    Stir in the tomato paste and cook for 2 minutes. Pour in the fish stock or seafood broth and bring to a simmer.

    Make the Bisque Base

    While the stock is simmering, extract the meat from the cooled lobster tails and chop into bite-sized pieces. Add the lobster meat to the pot and simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

    Finish with Cream and Sherry

    Stir in the heavy cream and sherry. Season with salt and black pepper to taste. Heat through until warmed but do not boil.

    Garnish and Serve

    Ladle the bisque into cups and garnish with fresh chives. Serve immediately.
