Beer Battered Fish

Method

Prepare the Tartar Sauce

  1. 1

    Mix Ingredients

In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Stir until well mixed, then refrigerate until serving.

Prepare the Chesapeake Fries

  1. 2

    Cut and Fry Potatoes

Peel and cut russet potatoes into fries. Rinse and pat dry. Heat oil in a deep fryer or large pot. Fry the potatoes in batches until golden brown, about 5-7 minutes. Season with Old Bay and salt while hot.

Prepare the Beer Battered Fish

  1. 3

    Make the Batter

In a bowl, mix flour, baking powder, salt, and black pepper. Slowly whisk in beer until smooth.

  2. 4

    Fry the Fish

Heat vegetable oil in a deep fryer or large pot. Dip fish fillets into the batter, allowing excess to drip off. Fry in batches until golden brown, about 4-5 minutes. Drain on paper towels.

Serve

  1. 5

    Plate the Dish

Serve the fried fish with a side of Chesapeake fries and a generous dollop of tartar sauce.
