Grilled Cheese Preparation

  1. 1

    Prepare the Sandwich

Spread butter evenly on one side of each slice of rustic bread. Layer the cheeses (Black Truffle Pecorino, Fontina, and Brie) on the unbuttered side of two slices, then top with the other two slices, buttered side up.

  2. 2

    Grill the Sandwich

Heat a skillet over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from the skillet and set aside.

Charred Tomato Dill Bisque Preparation

  1. 3

    Make the Bisque

In a pot, heat olive oil over medium heat. Add chopped tomatoes and cook until slightly charred. Add vegetable stock and bring to a simmer. Stir in dill, salt, and pepper. Let simmer for about 10 minutes to meld flavors.

  2. 4

    Blend the Bisque

Using an immersion blender, blend the tomato mixture until smooth. Stir in heavy cream and adjust seasoning if necessary. Heat through before serving.
