    Prepare the Fries

    Peel and cut the potatoes into thick strips. Rinse them in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Make the Tartar Sauce

    In a bowl, combine mayonnaise, dill pickle relish, lemon juice, and capers. Mix well and set aside in the refrigerator to chill while you prepare the fish.

    Prepare the Batter

    In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add craft beer and mix until smooth.

    Fry the Fish

    Heat vegetable oil in another pot or fryer to 350°F (175°C). Dip each cod fillet into the batter, allowing excess to drip off, then carefully place in hot oil. Fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Serve

    Plate the fish and chips together. Serve the fried fish with a side of seasoned fries and a generous dollop of house-made tartar sauce.
