    Prepare the Mashed Potatoes

    Peel and chop the potatoes into cubes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with milk and cream cheese until smooth. Set aside.

    Sear the Filet Mignon

    Preheat a skillet over medium-high heat. Season the filet mignon with salt and black pepper. Add olive oil to the pan and sear the steaks for about 4-5 minutes on each side for medium-rare, adjusting time based on thickness and desired doneness.

    Add Flavor

    During the last minute of cooking, add butter, garlic, and fresh herbs to the skillet. Spoon the melted butter over the steaks to baste them.

    Cook the Seasonal Vegetables

    In a separate pan, sauté the seasonal vegetables in olive oil over medium heat until tender, about 5-7 minutes. Season with salt and pepper to taste.

    On each plate, serve the mashed potatoes, topped with the filet mignon. Arrange the sautéed vegetables alongside, and drizzle any remaining steak butter over the top.
