Cooking Instructions

  1. 1

    Prepare the Chicken

Rub the chicken breasts with olive oil and Cajun seasoning. Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked and charred. Remove from heat and let rest before slicing.

  2. 2

    Cook the Fettuccini

In a large pot of salted boiling water, cook the fettuccini pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

  3. 3

    Sauté the Vegetables

In the same skillet used for the chicken, add the fire roasted peppers and foraged mushrooms. Sauté for about 5 minutes until tender.

  4. 4

    Make the Cajun Cream Sauce

Pour in the heavy cream and bring to a simmer. Add fresh black pepper and salt to taste. Let it cook for 3-4 minutes until slightly thickened.

  5. 5

    Combine Everything

Add the cooked fettuccini to the skillet with the cream sauce. Toss to coat the pasta well, adding reserved pasta water if needed for consistency. Add the sliced blackened chicken on top.

  6. 6

    Garnish and Serve

Sprinkle with chopped fresh parsley before serving. Enjoy your Blackened Chicken Fettuccini!
