    Prepare the Chicken

    Rub the chicken breasts with olive oil and Cajun seasoning on all sides. Allow them to marinate for at least 30 minutes.

    Cook the Pasta

    In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sear the Chicken

    Heat a skillet over medium-high heat. Add the marinated chicken breasts and sear for about 6-7 minutes per side or until blackened and cooked through. Remove from the skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add a bit more olive oil if needed and sauté the garlic and foraged mushrooms until mushrooms are tender. Then, add the fire-roasted peppers and sauté for an additional 2 minutes.

    Make the Cajun Cream Sauce

    Reduce the heat to low, add the heavy cream and black pepper to the skillet. Stir and simmer for about 3-4 minutes until the sauce thickens slightly.

    Combine Everything

    Add the cooked fettuccine to the skillet and toss to coat in the Cajun cream sauce. Slice the blackened chicken and place it on top.

    Serve

    Garnish with chopped parsley and serve immediately.
