Marinate the Pork
In a bowl, combine the pork shoulder with cumin, chili powder, paprika, garlic powder, salt, and black pepper. Pour buttermilk over the pork, cover, and refrigerate for at least 2 hours, preferably overnight.

Prepare the Slaw
Finely shred red cabbage and mix with lime juice and salt in a bowl. Set aside to let flavors meld.

Make Avocado Puree
In a blender, combine avocados with lime juice, salt, and a splash of water. Blend until smooth and creamy.

Prepare Green Chili Sour Cream
In a bowl, mix sour cream with chopped green chili and salt to taste. Adjust consistency with a little water if necessary.

Fry the Pork
Heat oil in a deep fryer or large skillet to 350°F (175°C). Remove pork from marinade, shaking off excess. Fry in batches until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

Assemble Tacos
Warm corn tortillas in a skillet. Place a piece of fried pork on each tortilla, topped with red cabbage slaw, pineapple chunks, avocado puree, and green chili sour cream. Serve immediately.
