Prepare the Chorizo
In a skillet over medium heat, add the olive oil and chorizo. Cook until the chorizo is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

Melt the Cheese
In an oven-safe dish, combine the Chihuahua and Monterey Jack cheeses. Stir in the cooked chorizo, then spread the mixture evenly.

Bake
Preheat your oven to 350°F (175°C). Place the dish in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes. Serve hot with warm tortillas for dipping.
