    Make simple syrup base

    Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Stir to combine and bring to a gentle simmer over medium heat until sugar fully dissolves (about 3–5 minutes). Do not boil vigorously — a gentle simmer is enough to dissolve sugar and concentrate flavors.

    Add flavor components

    Remove the pan from heat. Stir in 2 tablespoons fresh citrus juice and 1 teaspoon zest (if using). Add 1 teaspoon of your chosen extract or flavoring (vanilla for creamy notes, cola essence for cola-style soda, or a fruit extract for fruit soda). If you want a particular color, stir in a few drops (about 1/4 teaspoon) of natural food coloring. Taste the warm syrup and adjust: add up to 1 tablespoon more citrus juice for brightness or another 1/4 teaspoon extract for stronger aroma.

    Cool and strain

    Allow the syrup to cool to room temperature (15–20 minutes). If you used zest or any solids, strain the syrup through a fine mesh sieve into a clean container to remove solids. Refrigerate the syrup if not using immediately; it will keep for about 1–2 weeks in the refrigerator.

Assemble Soda

    Prepare a tall glass by filling it with about 1 cup of ice cubes (or as desired). Pour 2–3 tablespoons of the prepared syrup into the glass. Start with 2 tablespoons for a lightly sweet soda and use 3 tablespoons for a sweeter, more concentrated drink. You can adjust to taste.

    Slowly pour 4 cups of cold carbonated water over the syrup and ice. To preserve carbonation, pour gently down the side of the glass or over a spoon. Stir gently once or twice with a long spoon to combine syrup and soda without flattening the carbonation.

    Taste the soda and adjust sweetness or acidity: add another 1/2–1 tablespoon syrup for more sweetness, or a squeeze of fresh citrus for more brightness. If desired, add a sprig of fresh mint and a citrus wheel as garnish.
