    Prepare oven and pans

    Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line the bottom with parchment paper. If using two 8-inch pans, divide batter evenly.

    Combine dry ingredients

    In a medium bowl, whisk together the all-purpose flour (2 cups), baking powder (2 tsp), and salt (1/2 tsp) until evenly combined. Set aside.

    Cream butter and sugar

    In a large mixing bowl, beat the softened unsalted butter (1/2 cup) and granulated sugar (1 1/2 cups) together with a hand mixer or stand mixer on medium speed until light and fluffy, about 3 to 4 minutes. Scrape down the bowl as needed.

    Add eggs and vanilla

    Add the eggs (2) one at a time, beating briefly after each addition until incorporated. Mix in the vanilla extract (2 tsp).

    Alternate adding dry and wet

    With the mixer on low speed, add one-third of the dry flour mixture to the butter mixture and mix until just combined. Add half of the milk (1/2 cup) and mix until incorporated. Repeat with another third of the dry ingredients, the remaining milk, then finish with the last third of the dry ingredients. Mix only until no streaks of flour remain—do not overmix.

    Transfer and smooth batter

    Scrape the batter into the prepared pan(s) and smooth the top with a spatula. Tap the pan gently on the counter to release any large air bubbles.

    Bake

    Bake in the preheated oven for 25 to 35 minutes for a single 9-inch pan (or 20 to 28 minutes for two 8-inch pans), or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached and the top is golden.

    Cool

    Remove the cake from the oven and set the pan on a wire rack. Let the cake cool in the pan for 10 to 15 minutes, then run a knife around the edge and invert onto the rack. Peel off parchment (if used) and let the cake cool completely before dusting or frosting, about 1 hour.

    Frost or dust

    When the cake is completely cool, dust with powdered sugar (about 1/4 cup sifted) or spread your favorite frosting evenly over the top and sides. If using a two-layer cake, place a dollop of frosting between layers before assembling.

    Top with fresh berries or sprinkles (about 1/2 cup) as desired. Slice and serve.
