    Prepare the glass

    Run the lime wedge around the outer rim of a rocks or coupe glass. Pour the coarse salt onto a small plate and gently dip the moistened rim into the salt to coat. Set the prepared glass aside.

    Measure ingredients

    Measure 2 oz blanco tequila, 1 oz fresh lime juice, 1 oz orange liqueur, and 0.5 oz simple syrup (or agave syrup). Using freshly squeezed lime juice yields the best bright flavor.

    Shake

    Fill a cocktail shaker about two-thirds full with ice (about 1 cup). Add the tequila, lime juice, orange liqueur, and simple syrup to the shaker. Secure the lid and shake vigorously for 10–15 seconds, until the outside of the shaker feels very cold and slightly frosted.

    Prepare serving ice

    If serving on the rocks, add about 3/4 cup of fresh ice to the salted glass. For a straight-up cocktail, skip adding serving ice and use a chilled glass.

    Strain and serve

    Double-strain the shaken margarita into the prepared glass using a Hawthorne strainer and a fine mesh strainer (or just the shaker strainer if you don't have a mesh). This removes small ice shards and pulp for a smoother drink.

    Garnish

    Garnish with the reserved lime wedge on the rim or floated on top. Serve immediately.

    Notes on variations

    Adjust sweetness to taste by increasing or decreasing the simple syrup/agave. For a frozen margarita, combine the measured liquids with 2 cups of ice in a blender and blend until smooth. For a skinny margarita, omit the simple syrup and use 0.75–1 oz orange liqueur or an orange-flavored calorie-free syrup.
