Burger Patties

    Form Patties

    Place the ground beef in a bowl. Add Worcestershire sauce, 3/4 of the salt and 1/2 of the pepper. Gently mix with your hands just until combined; do not overwork. Divide the meat into 4 equal portions (about 4 oz each). Lightly form each portion into a patty about 3/4 inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty with your thumb to help them cook evenly.

    Season

    Just before cooking, season both sides of each patty with the remaining salt and pepper.

    Cook

    Heat a large skillet or griddle over medium-high heat. Add the vegetable oil and swirl to coat. When the pan is hot and shimmering, place the patties on the surface leaving space between them. Cook undisturbed 3 to 4 minutes until a brown crust forms. Flip and cook another 3 minutes for medium (adjust time ±1 minute for desired doneness). If adding cheese, place a slice on each patty during the last minute of cooking and cover loosely to melt.

Sauce

    While the patties cook, combine mayonnaise, ketchup, mustard, sweet pickle relish, paprika, and hot sauce (if using) in a small bowl. Taste and adjust seasoning. Chill until ready to assemble.

Buns & Assembly

    Toast Buns

    Split the buns and spread the softened butter evenly on cut sides. After patties are nearly done, place the buns butter-side down on a clean skillet or the griddle over medium heat. Toast until golden and crisp, about 1 to 2 minutes.

    Slice Vegetables

    While toasting, slice the tomato into 1/4-inch rounds and slice the red onion into thin rings. Pat lettuce leaves dry.

    Assemble Burgers

    Spread about 1 tablespoon of sauce on the bottom half of each bun. Place a lettuce leaf on top, then a cooked patty (with melted cheese if using). Top with tomato slice, a couple onion rings, and two pickle slices. Spread a little sauce on the top bun and close the burger. Serve immediately.
