Prepare the Rose Petal Reduction
In a small saucepan, combine fresh rose petals and 1 cup of water. Bring to a boil, then reduce heat and let simmer for about 15 minutes until the petals have imparted their color and flavor into the water. Strain the liquid to remove the petals and set aside the rose petal reduction.

Muddle the Jalapeño
Slice the jalapeño in half and remove the seeds if you prefer less heat. Place it in a cocktail shaker and muddle it gently to release its juices.

Combine the Ingredients
Add the non-alcoholic blanco tequila, fresh lime juice, honey or agave syrup, and the rose petal reduction to the shaker with the muddled jalapeño. Fill the shaker with ice and shake well until chilled.

Serve
Strain the mixture into a glass filled with ice. Top with sparkling water and garnish with a few fresh rose petals and a slice of jalapeño if desired.
