Rinse the catfish fillets under cold water and pat them dry with paper towels.

Coat the Fillets
In a shallow dish, mix the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Dredge each fillet in the mixture, ensuring they are evenly coated.

Fry the Catfish
Heat the vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

In a large bowl, combine the shredded cabbage, grated carrots, and chopped cilantro.

In a small bowl, whisk together the lime juice, olive oil, and salt.

Pour the dressing over the slaw mixture and toss well to combine. Set aside to marinate for at least 15 minutes.
