Prepare the Beef Tongue

Cook the Beef Tongue
In a large pot, place the beef tongue and cover it with water. Add the onion, garlic cloves, bay leaves, salt, and black peppercorns. Bring it to a boil, then reduce the heat to low and let it simmer for about 3-4 hours or until the tongue is tender.

Peel the Tongue
Once cooked, remove the tongue from the pot and let it cool slightly. Peel off the outer skin, which should come off easily. Slice the tongue into thin pieces.
Make the Salsa Verde

Prepare the Tomatillos
In a saucepan, boil the tomatillos until they are soft, about 10 minutes. Drain and let cool.

Blend the Salsa Verde
In a blender, combine the boiled tomatillos, cilantro, jalapeño, garlic cloves, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.
Assemble the Tacos

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Fill the Tacos
On each tortilla, place a few slices of the beef tongue, top with a spoonful of salsa verde, slices of avocado, and a few radish pieces.

Serve
Serve the tacos with lime wedges on the side for squeezing over the top before enjoying.
