Fries Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potatoes and lay them out on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying for about 5-7 minutes or until golden and crispy.

    Drain and Season

    Remove the fries from the oil and drain them on paper towels. While they are still hot, sprinkle with salt.

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes.

    Season the Steak

    Rub the steaks with olive oil, salt, black pepper, and garlic powder on both sides.

    Heat the Pan

    In a heavy skillet or cast-iron pan, heat over medium-high heat until very hot.

    Cook the Steak

    Add the steaks to the pan and cook for about 4-5 minutes on one side without moving them. Flip the steaks and add butter and thyme to the pan.

    Baste the Steak

    Using a spoon, baste the steaks with the melted butter and cook for another 4-5 minutes for medium-rare, or until your desired doneness.

    Rest the Steak

    Remove the steaks from the pan and let them rest for about 5 minutes before slicing.
