Chicken Preparation

Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Marinate the Wings
In a large bowl, combine the chicken wings with agave syrup, juice of 1 lime, and a pinch of salt. Mix well to ensure the wings are evenly coated. Let them marinate for at least 30 minutes.
Salsa Preparation

Prepare the Salsa
In a dry skillet over medium heat, toast the dried árbol chilies for about 2-3 minutes until fragrant. Remove and let cool.

Blend the Salsa
In a blender, combine the toasted chilies, garlic cloves, tomato, chopped onion, lime juice, salt, and olive oil. Blend until smooth. Adjust seasoning if necessary and set aside.
Cooking the Wings

Preheat the Smoker
Preheat your smoker to 225°F (107°C).

Smoke the Chicken Wings
Place the marinated chicken wings in the smoker and smoke for 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C).
Serving

Serve the Wings
Remove the wings from the smoker and let them rest for 5 minutes. Serve with the árbol salsa and lime wedges on the side.
