  2. 2

    Blanch the Shrimp

Bring a pot of salted water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Immediately transfer to an ice bath to stop the cooking process.

In a blender, combine the tomatoes, red onion, lime juice, jalapeño, and salt. Blend until smooth.

Taste the sauce and adjust seasoning if necessary, adding more salt or lime juice according to your preference.

Preparing the Vegetables

  1. 5

    Slice the Cucumber

Cut the cucumber in half lengthwise and then slice it into thin half-moons.

  2. 6

    Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out. Cut the avocado into cubes.

  3. 7

    Chop the Cilantro

Rinse the cilantro under cold water, shake off excess water, and chop it coarsely.

Combining the Ingredients

  1. 8

    Mix the Components

In a large bowl, combine the blanched shrimp, cucumber, avocado, cilantro, and the agua chile rojo sauce. Toss gently to coat everything evenly.
