    Prepare the Vegetables

    Dice the poblano pepper, tomato, and onion finely. Mince the garlic cloves.

    Sauté the Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced poblano pepper, onion, and garlic. Sauté for about 5 minutes or until the vegetables are softened.

    Add Tomato and Seasonings

    Stir in the diced tomato, salt, black pepper, cumin, and chili powder. Cook for another 2-3 minutes until the tomato is softened.

    Combine with Cheese

    Reduce the heat to low and add the Chihuahua cheese, Monterey Jack cheese, and cream cheese to the skillet. Stir continuously until the cheeses melt and the mixture is smooth.

Serving

    Warm the Tortillas

    In a separate skillet or on a griddle, warm the corn tortillas for about 30 seconds on each side until pliable.
