Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

  2. 2

    Add Butter

Cut the cold unsalted butter into small cubes and add to the flour mixture. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  4. 4

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 5

    Make the Cream Cheese Filling

In a mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

  2. 6

    Add Fruit

Gently fold in the fresh fruit to the cream cheese mixture until evenly distributed.

Assembly and Baking

  1. 7

    Preheat the Oven

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. 8

    Roll Out the Dough

On a floured surface, roll out the chilled dough to about 1/4 inch thick. Cut into desired shapes (squares, circles, etc.).

  3. 9

    Add Filling

Place a spoonful of the cream cheese filling in the center of each dough piece.

  4. 10

    Seal the Pastries

Fold the dough over the filling to create a pocket, then crimp the edges with a fork to seal.

  5. 11

    Brush with Egg Wash

Brush the tops of the pastries with the beaten egg and sprinkle with sugar.

  6. 12

    Bake

Bake in the preheated oven for 20-25 minutes, or until golden brown. Let cool before serving.
