Preparing Hash Browns

Peel the Russet potatoes and grate them using a box grater or food processor.

Transfer the grated potatoes to a clean kitchen towel and squeeze out excess moisture. This step is crucial for crispy hash browns.

Cook Hash Browns
In a large skillet, heat the vegetable oil over medium heat. Add the grated potatoes and spread them in an even layer. Season with salt. Cook for 5-7 minutes, then flip and cook for another 5-7 minutes until golden and crispy.

In a saucepan, fill with water about 3 inches deep. Add vinegar and bring to a gentle simmer.

Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide each egg into the center. Poach for 3-4 minutes for a runny yolk or longer if desired. Remove with a slotted spoon and set aside.
