Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a colander and rinse them under cold water to remove excess starch.

Let the potatoes sit in the colander for about 10 minutes to drain. Then, using a clean kitchen towel or paper towels, squeeze out as much moisture as possible from the grated potatoes.

In a large skillet, heat the vegetable oil over medium-high heat until it’s shimmering.

Combine Ingredients
In a large bowl, combine the drained grated potatoes, chopped onion, salt, pepper, and optional garlic powder if using. Mix until well combined.

Cook the Hash Browns
Spoon the potato mixture into the hot skillet, spreading it out evenly. Flatten with a spatula. Cook for 5-7 minutes until the bottom is golden brown and crispy.

Carefully flip the hash browns using a large spatula. Cook for an additional 5-7 minutes until the second side is golden brown and crispy.
