Preparing Caramel

Make the Caramel
In a medium saucepan over medium heat, combine 1 cup of granulated sugar and 1 cup of water. Stir until the sugar dissolves, then stop stirring and let it boil.

Achieve the Right Color
Continue boiling until the mixture turns a golden amber color, about 10-15 minutes. Be careful not to burn it.

Pour Caramel into Mold
Quickly pour the caramel into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to cool and harden.
Making the Flan

Prepare the Flan Mixture
In a large mixing bowl, combine 1 can of sweetened condensed milk, 1 can of evaporated milk, 4 large eggs, 1 tsp of vanilla extract, and a pinch of salt.

Blend the Mixture
Using a hand blender or a whisk, blend the mixture until smooth and well combined.

Pour the Mixture into Mold
Carefully pour the flan mixture over the hardened caramel in the mold.

Prepare for Baking
Preheat the oven to 350°F (175°C) and place the flan mold in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the flan mold.

Bake the Flan
Bake in the preheated oven for about 50-60 minutes, or until the flan is set (a knife inserted in the center should come out clean).

Cool the Flan
Remove the flan from the oven and let it cool in the water bath for about 30 minutes. Then refrigerate for at least 4 hours, or overnight for best results.

Serve the Flan
To serve, run a knife around the edges of the flan to loosen it, then invert it onto a plate. The caramel sauce will flow over the top.
