Croissant

For Assembly

Method

Making the Croissant Dough

  1. 1

    Prepare the Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt.

  3. 3

    Combine Ingredients

Make a well in the center of the flour mixture and add the frothy yeast mixture, melted unsalted butter, and milk. Mix until a dough begins to form.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth.

  5. 5

    First Rise

Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.

  6. 6

    Roll and Fold

Roll the dough into a rectangle, place the cold butter in the center, fold the dough over the butter, and roll it out. Repeat this process for a total of 3 times.

  7. 7

    Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Assembling the Croissant Madame

  1. 8

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 9

    Shape the Croissants

Roll out the chilled dough and cut it into triangles. Roll each triangle starting from the base to the tip to shape the croissant.

  3. 10

    Prepare the Egg Mixture

In a bowl, whisk together the 2 large eggs, salt, and black pepper.

  4. 11

    Add Fillings

Place a slice of ham and a sprinkle of gruyere cheese at the base of each croissant before rolling.

  5. 12

    Bake the Croissants

Place the shaped croissants on a baking sheet lined with parchment paper. Brush the tops with the egg mixture. Bake for 15-20 minutes until golden brown.

  6. 13

    Prepare the Final Assembly

Once the croissants are baked, remove them from the oven and let them cool slightly. Top with more gruyere cheese and fresh parsley if desired.

  7. 14

    Serve

Serve the Croissant Madame warm, garnished with fresh parsley and additional seasoning if desired.
