Breakfast Potato Preparation

    Prepare the Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Omelette Preparation

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, Old Bay seasoning, and chopped chives until well combined.

    Cook the Omelette

    In a non-stick skillet over medium-low heat, pour the egg mixture. Allow it to cook for about 2-3 minutes or until the edges start to set. Gently lift the edges with a spatula to let the uncooked eggs flow underneath.

    Add the Crab

    Once the omelette is mostly set, sprinkle the lump crab meat over one half of the omelette. Carefully fold the other half over the crab and cook for an additional minute until the crab is heated through.

Hollandaise Sauce Preparation

    In a heatproof bowl, whisk the egg yolks and lemon juice together. Place the bowl over a pot of simmering water (double boiler setup). Continue whisking until the mixture begins to thicken.

    Gradually whisk in the melted butter until the sauce is thick and creamy. Season with salt to taste.

Assembly
