Cook the Omelet
In a non-stick skillet, heat a small amount of butter or oil over medium heat. Pour in the egg mixture and reduce the heat to low. Cook until the edges begin to set, then gently lift the edges with a spatula and tilt the pan to allow uncooked egg to flow to the edges. Cook until the omelet is set but still slightly soft in the center, about 4-5 minutes.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens and doubles in volume. Slowly drizzle in the melted butter while continuing to whisk until the sauce is smooth and creamy. Season with salt and cayenne pepper to taste.
