Method

Salad Preparation

  1. 1

    Prepare the Lettuce

Wash the romaine lettuce thoroughly under cold water, then dry it using a salad spinner. Chop into bite-sized pieces and place in a large salad bowl.

  2. 2

    Chop the Vegetables

Cut the avocado in half, remove the pit, and dice the flesh. Dice the tomatoes into small pieces. Add both the avocado and tomatoes to the bowl with the romaine.

  3. 3

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from heat, let cool slightly, and crumble into small pieces. Add the crumbled bacon to the salad bowl.

Black Bean Salsa Preparation

  1. 4

    Prepare the Black Beans

Drain and rinse the canned black beans under cold water. In a mixing bowl, combine the black beans, finely chopped red onion, and chopped cilantro.

  2. 5

    Season the Salsa

Add lime juice, salt, and pepper to the black bean mixture. Stir well to combine and set aside to let the flavors meld.

Adding Extras

  1. 6

    Add Corn

Add the sweet corn to the salad bowl and mix gently to combine all the ingredients.

Creamy Cilantro Dressing Preparation

  1. 7

    Make the Dressing

In a blender, combine mayonnaise, sour cream, cilantro, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy.

Final Assembly

  1. 8

    Combine and Serve

Pour the creamy cilantro dressing over the salad and toss gently to coat all ingredients evenly. Serve immediately.
