Prepare the Mousse

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or microwave, stirring until smooth. Allow it to cool slightly.

Whisk the Eggs
In a separate bowl, separate the egg whites from the yolks. Whisk the egg yolks with granulated sugar, vanilla extract, and a pinch of salt until the mixture is pale and thick.

Combine Chocolate and Yolks
Once the chocolate has cooled slightly, fold it into the egg yolk mixture until well combined.

Whip the Cream
In another bowl, whip 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.
Prepare the Whipped Cream Topping

Whip the Heavy Cream
In a bowl, combine 150 ml of heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Serve the Mousse
Once the mousse has set, remove it from the refrigerator. Top each serving with a dollop of whipped cream before serving.
