Method
Preparation

- 2
Melt Chocolate and Butter
In a medium saucepan, combine the unsalted butter and bittersweet chocolate. Melt over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.
- 3
Whisk Sugar and Eggs
In a large bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly thickened.
- 4
Combine Mixtures
Gradually add the melted chocolate mixture into the egg mixture, whisking constantly until fully combined.
- 5
Add Dry Ingredients
Fold in the all-purpose flour, vanilla extract, and salt until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.
- 8
Cool Slightly
Remove from the oven and let cool for 1 minute. Carefully run a knife around the edges of each ramekin to loosen the cake.
- 9
Serve
Invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on top and garnish with fresh berries if desired.
