Ingredients

Preparation

Corn Tortillas

1. Make the Tortilla Dough

In a large mixing bowl, combine masa harina, water, and salt. Mix until a dough forms.

2. Shape the Tortillas

Divide the dough into 8 equal portions and roll each into a ball. Flatten each ball between your palms to form a tortilla.

3. Cook the Tortillas

Heat a skillet over medium-high heat. Cook each tortilla for about 1-2 minutes on each side until lightly browned.

Black Bean Purée

4. Prepare the Black Beans

In a blender or food processor, combine the canned black beans (drained), garlic, cumin, olive oil, and salt. Blend until smooth.

Avocado Crema

5. Make the Avocado Crema

In a blender, combine ripe avocado, sour cream, lime juice, and salt. Blend until smooth and creamy.

Pico de Gallo

6. Chop the Ingredients

Dice the tomatoes, red onion, and cilantro. Combine them in a bowl.

7. Season the Pico de Gallo

Add lime juice and salt to the chopped ingredients. Mix well.

Chicken Tinga

8. Cook the Chicken

In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

9. Add the Chicken and Sauce

Add the chicken breasts, chipotle in adobo sauce, and chicken broth. Simmer until the chicken is cooked through (about 20 minutes).

10. Shred the Chicken

Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and mix with the sauce.
