Bagel Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Make Dough
In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and mix until a dough forms.

Knead Dough
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Shape Bagels
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center to form the bagel shape.

Boil Bagels
In a large pot, bring water to a boil and add baking soda. Boil the bagels for about 1-2 minutes on each side, then remove and let them drain.

Preheat your oven to 425°F (220°C).

Bake Bagels
Place the bagels on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.

In a bowl, combine the cream cheese with chopped chives and garlic powder (if using). Mix until smooth and well combined.
