Masa Dough Preparation

    Mix Ingredients

    In a large bowl, combine masa harina, water, and salt. Mix until a soft dough forms.

    Knead Dough

    Knead the dough on a flat surface for about 2-3 minutes until smooth and pliable.

    Rest Dough

    Cover the dough with a damp cloth and let it rest for 30 minutes.

Green Pepita Sauce Preparation

    Toast Pepitas

    In a skillet over medium heat, toast the pepitas until golden brown, about 5-7 minutes. Let cool.

    Blend Sauce

    In a blender, combine toasted pepitas, cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth. Adjust seasoning as needed.

Árbol Salsa Preparation

    Prepare Chiles

    Remove stems and seeds from the árbol chiles. Place them in a small saucepan with water and bring to a boil.

    Add tomatoes, garlic, onion, and salt to the saucepan. Simmer for 10-15 minutes until the vegetables are soft.

Asparagus Preparation
