Masa Dough Preparation

Mix Ingredients
In a large bowl, combine masa harina, water, and salt. Mix until a soft dough forms.

Knead Dough
Knead the dough on a flat surface for about 2-3 minutes until smooth and pliable.

Rest Dough
Cover the dough with a damp cloth and let it rest for 30 minutes.
Green Pepita Sauce Preparation

Toast Pepitas
In a skillet over medium heat, toast the pepitas until golden brown, about 5-7 minutes. Let cool.

Árbol Salsa Preparation

Prepare Chiles
Remove stems and seeds from the árbol chiles. Place them in a small saucepan with water and bring to a boil.

Blend Salsa
Transfer the mixture to a blender and blend until smooth. Adjust seasoning if necessary.
Asparagus Preparation

Roast Asparagus
Preheat the oven to 400°F (200°C). Spread the asparagus on a baking sheet and roast for 15-20 minutes until tender.
Assembly

Frito Assembly
Take a portion of the masa dough and flatten it into a disc about 1/4 inch thick. Fill it with roasted asparagus and fold to create a pocket. Seal the edges.

In a deep skillet, heat oil over medium-high heat. Fry the filled fritos until golden brown on both sides, about 3-4 minutes per side.

Serve the fritos warm, drizzled with green pepita sauce and árbol salsa.
