Method
Making the Pretzel Dough

Activate Yeast
In a large bowl, dissolve brown sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
Add flour and salt to the yeast mixture. Stir until the dough starts to come together.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shaping and Boiling the Pretzels

Shape the Pretzels
Preheat the oven to 450°F (230°C). Divide the dough into 8 equal pieces and roll each piece into a long rope. Twist into a pretzel shape.

Boil the Pretzels
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil each pretzel for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Salt the Pretzels
Sprinkle coarse sea salt on top of each pretzel.

Bake the pretzels in the preheated oven for about 12-15 minutes, or until golden brown.

Gradually whisk in milk, cooking until the sauce thickens.
