Preparation Steps
Prepare the Croutons
Preheat your oven to 375°F (190°C). Cut the focaccia bread into cubes and toss them with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and bake for about 10-15 minutes or until golden and crispy.
Make the Dressing
In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, Dijon mustard, confit garlic (mashed), salt, and black pepper to taste until well combined.
Prepare the Salad
Chop the little gem romaine into bite-sized pieces and place them in a large salad bowl. Add the croutons and toss with the dressing until evenly coated.
Add the Cheese and Anchovies
Shave the Tasmanian pepper parmesan cheese over the salad using a vegetable peeler. Top with white anchovies for added flavor.
Serve
Serve the salad immediately while the croutons are still crispy. Enjoy!
