Preparation

    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Rub the organic half chicken with olive oil, salt, black pepper, garlic powder, and fresh rosemary.

    Prepare the Stuffing

    In a large skillet, heat olive oil over medium heat. Add chopped onion and celery, and sauté until soft. Add diced butternut squash and cook until tender. Stir in the brioche bread, vegetable broth, sage, thyme, salt, and pepper. Mix well and remove from heat.

    Stuff the Chicken

    Stuff the prepared chicken with the brioche butternut squash stuffing. Place the chicken in a roasting pan.

Roasting

    Roast the Chicken

    Roast the chicken in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (75°C).

Brussels Sprouts

    Prepare Brussels Sprouts

    Toss the trimmed and halved Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet.

    Roast Brussels Sprouts

    Roast Brussels sprouts in the oven for the last 20 minutes of the chicken's cooking time.

Maitake Mushroom Gravy

    Make the Gravy

    In a saucepan, melt butter over medium heat. Add chopped maitake mushrooms and sauté until soft. Stir in flour and cook for 1 minute. Gradually whisk in vegetable broth and soy sauce. Simmer until thickened. Season with salt and pepper.

Serving

    Serve

    Let the chicken rest for 10 minutes before carving. Serve with roasted Brussels sprouts and maitake mushroom gravy.
