Make the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan to form a crust. Bake for 10 minutes, then remove and cool.

Prepare the Cheesecake Filling
In a large mixing bowl, combine mascarpone cheese, cream cheese, granulated sugar, and vanilla extract. Beat with an electric mixer until smooth. Add eggs one at a time, mixing well after each addition.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust and smooth the top. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.

Make the Cranberry Coulis
In a saucepan, combine fresh cranberries, water, granulated sugar, and lemon juice. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until the cranberries burst and the mixture thickens. Remove from heat and let cool.

Poach the Pears
Peel and core the pears. In a saucepan, place the pears and cover them with water. Simmer for 15-20 minutes until tender. Remove from heat and let cool.

Serve
Slice the chilled cheesecake and serve on plates. Top with poached pears and drizzle with cranberry coulis.
